Ingredients:
Italian sausage
onions
red bell peppers
garlic
dry white wine
thyme (fresh, though dried works okay)
cooked polenta
This is a great recipe: you cook everything except the polenta in the pan and then throw it in the oven for 15 minutes to roast, with a wonderful sauce developing during cooking. The polenta is cooked separately in the pan, and soaks up the juices. The thyme really comes out in the flavour. It's a pretty fast recipe but the end result is very impressive; with crusty bread it's even better.

Multigrain Pasta with Sweet Potatoes and Leeks
Ingredients:
multigrain penne
leeks
garlic
sage
sweet potatoes
Parmesan
nutmeg
This was a pretty quick after-work meal, with an unusual set of ingredients. We found the end result a little dry, perhaps because we accidentally used more pasta than prescribed by the recipe, and we might try to tweak things next time. The sage smelled wonderful when added to the pan, but it wasn't as obvious in the final result.

Classic Lasagna
Ingredients:
lasagna sheets
ground/minced beef
ground Italian sausage
oregano
thyme
basil
tomato sauce
ricotta cheese
eggs
Parmesan
mozzarella
This is an excellent simplification of the lasagna recipe. The shortcuts don't compromise the taste, but make the dish much less time-consuming than in other incarnations. It was surprisingly easy to prepare and assemble and got the thumbs up from our guests - and from us!
The original recipe suggested a can of mushrooms; we might suggest zucchini instead.

Squash Moussaka

milk
crème fraîche (sour cream works, too)

The first group of ingredients are cooked in the pan and then topped with the latter group prior to baking. This is a really top-notch veggie dinner.
